Overall, there are seven steps in the process, beginning with the cultivation of sugar cane and ending with the drying and cooling of the finished sugar. The first two stages take place in the fields, while the remainder are industrial processes in which juice is extracted from the cane, purified and turned into crystals.
To begin with, sugar cane is grown for a period of 12 to 18 months until it is ready to be harvested. Harvesting can be carried out either mechanically, using a large machine that loads the canes into a trailer, or manually by workers who cut the plants by hand. The harvested canes are then fed into a crushing machine, where they are pressed between rollers to extract their juice.
Following this, the juice is purified by passing it through a limestone filter. The filtered liquid is next heated in an evaporator, where it thickens into syrup. This syrup is subsequently spun in a centrifuge, which separates the sugar crystals from the remaining liquid. In the final stage, the crystals are dried and cooled in a large drum, producing the sugar that is ready for use.
